If you can go into Costco and not buy a rotisserie chicken then you are my hero. I can not do such a thing. It feels like I’m losing money if I don’t buy one. For only $5 you can have an amazing chicken with leftovers.
…Meal Prep Monday – 4/8/2019
Welcome to week two of meal prep! This week I did a little mini meal prep session on Sunday and the majority on Monday. Because I did my big shopping trip this weekend I wanted to put it all away prepped and ready
Let’s talk about my “big shopping trip.” I use the cash envelope method of budgeting so I do my shopping based on my envelopes. The shopping trip that I know I will be going to Costco I give myself more in the envelope and the next shopping trip I give myself a little less and try to eat up everything. It doesn’t mean I only go to the grocery store twice a month but more like 1 big planned trip and 1 medium trip, one smaller trip, and (hopefully) enough left in the envelopes for incidental shopping trips, especially for fresh fruits and veggies. This weekend’s shopping trip was Costco/Trader Joes/Nob Hill trip.

…Meal Prep Monday – 4/1/2019
Hi guys! Do any of you try to meal prep? We all know that meal prep is the answer to making sure that we stay on track with our eating and also on track with our budget. But, I’m just going to say it, not many of us want to devote hours to our weekend shopping, cooking and cleaning up the explosion that happens to the kitchen after meal prep. I’m going to start a series where I show you what’s on my menu for the week and how I go about prepping for it.
Here’s a secret about meal prep: It can be whatever you want it to be!
It doesn’t have to be complicated. Some people want all their meals prepped and ready to just reheat throughout the week. Some people want the building blocks assembled but are ok with doing some cooking at dinnertime.
My style is building blocks. I know that on Tuesdays and Wednesdays and Thursdays dinner needs to come together quickly because those are days I work. I want easy but fun dinners on the weekend, that feel exciting but are not too hard. I’m not planning to eat out much this week, save for a weekend lunch or beer out, and Sunday dinner will be a grab and go item from Costco.
Another thing to note- because of my shopping cycle, I will be doing a big shopping trip on Sunday so therefore am working hard at using up a lot of things in my fridge/freezer.

The hardest part of this dish is spelling it if you happen to need to spell it. I kid you not every time I write it I say “TEE-
But in all seriousness, this is a recipe to keep in your back pocket. It is the perfect party dip, it goes on everything and is easy and cheap. Whip some up for meal prep and I promise you, you will be eating it on everything all week long.
Have guests stopping in for a quick visit and you need a dip? This uses pretty basic ingredients that I usually have on hand. Need to spice up some chicken? Drizzle this on top! Want to eat more veggies? Dip your veggies in it! I tell you this dip has your back. Just don’t try to spell it.
